Can I disconnect the humidity sensor from my extractor fan?

Yes you can.

In order to do this, you need to isolate the power supply to the unit and remove the cover. Once the cover has been removed, you should be able to see on the circuit board, the humidity sensor plugged in and labelled "HUM". You will just need to unplug this and then the fan will operate as normal with an adjustable overrun feature and turn off.
