Is the water that is collected in the dehumidifier distilled water?

No, the water collected is condensate, not distilled water. 

 

Distilled water is achieved by boiling water, killing off any bacteria/impurities in the process, and then allowing the vapour to condense. 

 

Dehumidifier condensate, however, is achieved by essentially freezing the moisture in the air onto the evaporator, then allowing it to condense via a defrost cycle, and collect in the tank.
